Peptone and beef extract provide nitrogen, carbon, vitamins, and growth factors; Sodium chloride maintains osmotic pressure; Potassium dihydrogen phosphate and disodium hydrogen phosphate form a buffer pair to stabilize the pH within an appropriate range, ensuring normal bacterial metabolism and reproduction.

Introduction to the Relevant Microbiological Characteristics

Salmonella

Gram negative rods, without spores, mostly with flagella and motile; Facultative anaerobic, rapidly reproduces in buffered broth, and the bacterial liquid is uniformly turbid; Can repair damage caused by heat, freezing, and disinfectants; Fermentation of glucose produces acid and gas, mostly producing hydrogen sulfide, without fermentation of lactose.

Escherichia coli

Gram negative short rod-shaped bacteria with flagella, some strains have capsules; Fast reproduction speed, obvious turbidity in meat broth, strong adaptability; Fermented lactose, glucose produces acid and gas, and the IMViC test is typically positive.

Shigella

Gram negative Bacillus subtilis, lacking flagella, motility, and spores; Facultative anaerobic, stable growth, mild to moderate turbidity of bacterial liquid; Fermentation of glucose produces acid but not gas, and most do not ferment lactose.

Proteus

Gram negative bacteria with abundant flagella and strong motility; The liquid culture is uniformly turbid and prone to the formation of thin bacterial films on the surface; Urease is positive, and most strains produce hydrogen sulfide.

Cronobacter (Enterobacter sakazakii)

Gram negative bacteria with flagella and no spores; Resistant to dry and low temperature stress, with strong recovery ability in a buffer system; It can ferment various sugars, and some strains produce yellow pigments.
